Slow Carb Diet: Cuban Influenced Pulled Pork

Pork Roast- this one is a shoulder

Sear the pork roast in a pan with 2 tablespoons oil until all sides are brown. This seals in the liquid so that the roast will be more tender and fall apart.

Brown the pork roast in a pan with 2 tablespoons oil

In a baking pan, combine spices.

  • 2 tablespoons Garlic powder
  • 1 T Cumin
  • 1 tsp Chipotle
  • 2 T Chili powder
  • Onion wedged
  • 2 T fresh cilantro chopped
  • 3/4 bottle beer
  • 1 cup orange juice
  • Juice from 2 lemons
  • Salt and pepper to taste

Place browned pork roast in roasting pan. With a ladle spoon, scoop up the mixture and pour over the roast a few times to coat it well. Do this again in the cooking process once or twice.

Cover the roast and the pan with foil so that all the steam can stay in while it’s cooking. Cook at 250 degrees for 5 hours.

Below is a pork cooking chart. It recommends 350 degrees as the cooking temperature. Which is fine and it will be done more quickly.

When finished the roast simply fell apart. I wish I could upload the deliciousness of this roast. Atlas, I cannot. You will have to make one for yourself. Enjoy!
